Chicken breast with spices (4 chicken breasts)

Ingredients
- 2 tablespoons Murray River salt
- 1 teaspoon lemon myrtle, ground
- black pepper, freshly ground
- ½ teaspoon mountain pepper leaf
Preparation
Lightly crush the Murray River salt between your fingers so that the flakes break up. Mix the salt with pepper, lemon myrtle and mountain pepper leaf. Sprinkle the mixture evenly over the chicken.
Place the chicken breast flat on a chopping board. Place your palm firmly on the meat and cut the breast horizontally with a sharp filleting knife to create two evenly thin pieces.
Heat a frying pan to medium temperature. The pan should be hot but not smoking. Fry the chicken briefly on both sides until it browns. Add fresh herbs of your choice.
Then place the pan in a preheated oven at 180 degrees Celsius (fan oven) for around eight minutes. Make sure that the pan is ovenproof. Alternatively, you can place the chicken on a baking tray lined with fresh herbs.
