Sweet Potato Burger

1 Sweet Potato, grated
1 spring onion finely chopped
1 teaspoon finely grated fresh ginger
1 teaspoon grain mustard
1 egg
50g Panko breadcrumbs
2 tablespoons fresh oregano, chopped
½ teaspoon salt
100g feta cheese, crumbled
Method
Grate the sweet potato.
Mix together the mustard, egg, ginger and oregano in a bowl. Add the sweet potato, feta cheese and spring onion mixing well with the salt and breadcrumbs. Let the mix sit for at least 10 minutes so the sweet potato releases its juices and makes the mix a bit softer.
Drizzle a little oil on the hot plate, place a ring form on the grill fill with burger mix and push down to form a solid burger.
Fry until golden on both sides. Place on a baking tray lined with paper and finish in the oven for 10 minutes.
