Sun Dried Tomato Paste

Ingredients

200g dried sundried tomatoes

50ml white balsamic

1 litre boiling water

½ teaspoon salt

Black pepper

100ml olive oil

Method

Place the dried sundried tomatoes in a plastic box and add the white balsamic. Pour the boiling water over and let soak until soft. Chop finely in a food processor add olive oil, salt and pepper.

Fill a jar with your paste and keep it in the fridge for quick use.

If keeping it longer press into ice cube trays and freeze. Pop out as needed. One cube is equal to a tablespoon.
