Potato Pancake

Ingredients

1 kg big potatoes skin on starchy type

90g flour

3 eggs

30ml milk

Chopped chives

Chopped dill

1.5 teaspoons salt

A few rounds pepper

pinch of cayenne pepper

1 teaspoon smoked sweet paprika

1 teaspoon cumin

3 spring onions finely sliced

oil for frying

Method

Place potatoes in a pot and cover with cold water, add some salt and bring to the boil. Turn the heat down and simmer until cooked through, 20 minutes or until a prick comes out smoothly. Remove from heat and cool. While the potatoes are cooling mix the eggs and flour with the milk to make a stiff pancake batter. Season with salt and pepper and other spices and add chopped herbs and spring onion. When the potatoes are cool, grate with a big grater and add to pancake batter stir well, check seasoning and adjust if necessary. Heat some oil in a frying pan and add spoonful’s of potato mix, flatten down a bit. Cook until golden and turn over and repeat until all your mix is finished.
