Lamb in the Pan

2 Lamb back strap
Jane’s pepper mix
Flaked salt
Oil for frying
Method
Preheat the oven to 180°C fan forced.
Place your frying pan on the stove to heat up.
Use a medium heat not on high!
Let the pan heat for about 8-10 minutes.
Season the lamb on both sides with the pepper mix and salt.
When you add the oil, it should go liquid but not smoke! If you have smoke the pan is too hot.
Gently place your lamb in the pan and make sure it has a nice sizzle happening. Fry off for about two minutes per side.
Place the whole pan in the oven if your pan has a metal handle. If not place on a baking tray.
Roast in the oven for 8 minutes. Remove and rest under a piece of alufoil for 8-10 minutes. Slice and serve with chimichurri.
