Chimichurri

New 30.08.25, Great Sauce with BBQ meats, fish and chicken

Ingredients

80g mixed herbs = parsley, coriander with their stems, oregano, mint, chervil, basil leaves

2 Garlic

150ml Olive oil

1 red onion cut into quarters

1 red chilli cut into quarters

25ml lemon juice

½ tsp salt

½ tsp pepper mix

25ml red wine vinegar

Method

Place all ingredients into a food processor and puree until smooth.

For a more traditional Chimichurri hand cut all the ingredients and mix in the oil and other liquid ingredients.

Leave for a day or two before you use it. The longer you leave it the better it tastes!
