Chicken Breast with Spice (4 chicken breasts)
Ingredients
- 2 tablespoons Murray River Salt
- 1 teaspoon Lemon myrtle ground
- 10 rounds Black pepper ground
- ½ teaspoon Mountain pepper leaf
Method
Crush the Murray River salt in your fingers a bit to break up the flakes add the pepper, lemon myrtle and mountain pepper leaf. Mix a little and sprinkle onto the chicken.
Lay your chicken breast flat on the chopping board place your palm flat on the breast, using a filleting knife cut through the chicken to form two flat pieces.
Seal the chicken on both sides in a pre-heated pan that is not too hot (see short video about pan heating). Add some fresh herbs to your pan and place in a preheated oven for 8 minutes. 180°C fan forced) Make sure your pan can go into the oven. If you have a pan with a plastic handle, then place your chicken on a baking tray lined with fresh herbs.
