Broccolini

400g Broccolini
2 tablespoons olive oil
Pinch Salt
Pinch pepper mix
½ teaspoon ground cumin
Method
Heat the olive oil and a pan that has a lid you can use. Lay the broccolini in the pan add the salt, pepper and cumin. Place the lid on the pan when you hear it sizzle. Give the pan a shake and leave for 30 seconds. Lift the lid and stir the broccolini a little. Add the lid again and leave for a further 30 seconds. Turn pan down a little. Shake the pan again and check to see if you can prick the broccolini with a cake prick. If it is too hard leave for a further 30 seconds. Shaking from time to time. Your broccolini will be bright green.
Serve with meatballs and tomato salsa and some mashed potatoes would be heaven.
