225g flour
225g sugar
75g semolina
75g ground almonds
¾ teaspoon baking powder
Pinch salt
3 eggs
225ml milk
188g butter, melted
150g sour cream
¼ teaspoon vanilla bean powder
525g Fruit
Method
Heat oven to 180°C / 356F, fan forced
Brush a little oil on to your baking form (30cm x 33cm) and line with baking paper.
Prepare the fruit. Cut fruits in half or quarters.
For the cake:
Combine the flour, sugar, semolina, ground almonds, baking powder, vanilla bean powder, cardamom, ground mace and salt in a large bowl.
In a measuring Jug whisk together the eggs, milk, butter and sour cream.
Fold the wet ingredients into the dry ingredients. Just mix to combine.
Spread mixture over your baking sheet. It is quite liquid.
Top with the fruits.
Bake for 20-25 minutes or until browned around the edges.
Cool, slice and eat;-)
